Tortellini Soup ala Ro's Garden


Made the following soup for Mimi since she felt like she was coming down with a cold. She said it was like Italian wonton and very tasty. I saw a recipe for tortellini soup in a cookbook but I didn't have those ingredients per se, especially since it called for a *can* of spinach. But here are the ingredients I did have:


2 Tblsp Butter
1 Tblsp Pure Olive Oil
2 cloves minced garlic*
*(I use pre-minced, from a jar - too convenient for words)
1 5oz pkg of fresh spinach*
*(remove stems - that's where the love is)
2 32oz boxes of stock*
*(can be boxes of beef, chicken, one of each, or Ro's own stock - look for the recipe, coming soon)
1 12oz pkg of cheese tortellini*
*(can be as small as 8oz pkg, can be any flavor of tortellini)
1 15.5oz can stewed tomatoes*
(do *not* drain and run knife through can, once opened, to slice tomatoes)
grated parmesan to taste (optional)

In a big soup pot - melt butter, add olive oil and garlic, warm just until garlic awakens being careful not to brown. Add spinach and soften down completely. Add stock. Bring to boil and reduce heat. Add stewed tomatoes, stir. Add tortellini. Bring back to boil. If using fresh tortellini, cover at boil and prepare to serve. Guests can sprinkle grated parmesan to taste.

Surprisingly, this soup didn't need any salt and pepper but that may be due to stock so you may need to add these to taste, as well as, the parmesan.
